Green bean and minced pork stir fry is a quick dish we love to make because of the full access to fresh green beans. It is our top choices for congee or porridge. You will only need several common ingredients to yield a flavor balanced dish.
Instead of using dried spices like dried peppers or Szechuan peppercorn in Szechuan style dry-fried green beans, I use fresh Thai peppers to bring a fait spice taste to this dish. Those fresh peppers not only bring spice taste to this dish, they also improve the aroma of this dish. If you want the dish to be milder, I still recommend adding 1 or 2 peppers.
Ingredients:
- 500g (around 1 pound) green beans, remove the two ends and chopped
- 1 cup ground pork (recommend meat with same fat)
- a small pinch of salt
- a small pinch of white pepper
- 1/2 tablespoon light soy sauce
- 2 garlic cloves, minced
- 1 tbsp. minced ginger
- 3-5 fresh Thai pepper, chopped
- 2 tbsp. cooking oil
Steps:
Add a small pinch of salt and white pepper to ground meat. Mix well and set aside for 10 minutes. Pour around 1 tablespoon of cooking oil in wok and fry the ground meat until crispy and slightly browned. Transfer out.
Add another 1 tablespoon of cooking oil and fry garlic, ginger and Thai pepper until aromatic. Pour chopped green beans and fry for 3-4 minutes until softened.
Return ground pork, add light soy sauce and a small pinch of salt if necessary. Simmer a while until all the sauce is evaporated.

i love this dish at the sichuan restaurant in my city.. they also add some kind of “olive vegetables” .. adds a special flavour.
