Smashed tofu fritters with minced pork and seasoned with common Chinese sauces.

This is perfect fritter who loves the taste of pan-fried crispy tofu. I create this recipe for my little daughter who loves meat but never taste plain tofu. She can smell the strong aroma during the pan-frying process and eat up two fritters one meal.

Minced Pork and Tofu Fritters

This recipe is not difficult at all. However I highly recommend using form tofu or at least regular tofu as they contains less water so the fritter will not break after cooked. And it is import to smash the tofu completely so the two main ingredients can combine completely. You can do this with a knife or directly use hand. Additionally, it is highly customizable. Chicken or beef can replace pork.

When frying the fritters, do not turn them over frequently at the beginning otherwise it will be quite hard to from the crispy out shell. Turn until one side becomes brown.  However at the last stage, move them frequently to prevent burnt.

Ingredients

  • 1.5 cup minced pork
  • 100 g firm tofu , around 1 cup in volume
  • 1 tablespoon minced green onion
  • 1 teaspoon minced ginger
  • 1 tablespoon oyster sauce
  • small pinch of salt if necessary
  • 1/4 teaspoon sugar

Pan-frying the fritters

  • 1 tablespoon cooking oil
  • 2 cloves garlic , minced
  • 1 teaspoon minced green onion
  • 1 teaspoon minced ginger
  • 1/2 tablespoon light soy sauce
  • 1/4 teaspoon sesame oil

Instructions

  • In a large bowl, mix tofu with minced pork, add all the other seasoning and combine well. Then divide into six portions. Take one portion and press hardly with both hands and then form a round ball. And then slightly flat it. Continue to finish all the six ones.
  • Heat up oil in a large pan, fry the fritters until one side becomes slightly brown over medium fire (around 3 minutes) and then turn over to fry the other side. If you prefer a crisper taste, continue to fry for another 1 minute.
  • And then add minced green onion, minced ginger, light soy sauce and sesame oil. Cover the lid and heat for another minute over slow fire. Serve hot.
