Super delicious sweet, sour, and spicy chicken feet salad, a new Chinese star snack. I know there are loves and also haters for Chicken feet. But this hot and sour pickled chicken feet will change your mind definitely.
Why we love chicken feet
Chinese people not only love chicken feet for their taste but also for their nutritional value – making them one of the most popular Chinese dishes. In China, chicken feet are considered a delicacy. They are served at restaurants and eaten as snacks, with some people even making chicken feet a regular part of their diet. It is reported that chicken feet have many health benefits, such as providing essential vitamins, minerals, and nutrients to the body. Additionally, chicken feet provide high amounts of collagen which is believed to be able to reduce wrinkles and improve skin elasticity.
The reason why I love chicken feet as a snack is that eating chicken feet can be super time-consuming so it can reduce the total intake amount. There are definitely no worries about the weight.
How long to cook the chicken feet
You can adjust the cooking time of chicken feet. If you want a chewier texture, cook the for 8 minutes. If you want a softer version, cook for 12 to 15 minutes. However don’t overcook them, otherwise, the skin and shape will be destroyed.
If you prefer a super chew version, 5 minutes are enough.
Soak the cooked chicken feet in cold water
Soak the chicken feet in iced water can help to tighten the skins and thus brings a better elastic texture.

- organic chicken feet – you can use chicken feet with bone or boneless chicken feet. And then cut them in halves.
- Lemon – is used to add a bright, tart flavor to many dishes. The juice of fresh lemons can provide a lovely sour taste in addition to vinegar. The lemon skin will also give the salad a lovely lemon aroma.
- Thai hot pepper – Thai hot pepper gives a hot dish
- ginger – enhances the aroma
- light soy sauce – light soy sauce is a savory base of the salad
- salt to taste
- sugar – sugar can combine all the tastes together, making they cooperate better
🔪Instructions
Cut the claws and then cut each chicken foot into 2 pieces. Smaller pieces mean better flavors in a shorter time.
In a deep pot with enough cold water, add chicken feet, cooking wine, and rice vinegar. Bring the content to a boil and then cook for 8 minutes (depending on how soft you want the chicken feet to be).
Once cooked, transfer out and clean with warm water (removing extra colloid) . Then pour in cold water to soak the chicken feet for 20 minutes. Soaking with cold water makes the chicken feet’ skin more elastic.
Prepare all the seasonings: add lemon pieces, garlic, ginger, chili peppers, coriander steam, and coriander.
Mix in light soy sauce, black vinegar, and sugar. Make a message with the chicken feet for 1 or 2 minutes. Let the sauce combine completely.
Cover with plastic wrapper and set aside in the fridge overnight.
How long can this salad last
You can store this in the fridge for 3 days. But in most cases, you will finish them up on the second day. This can be a great dish for friend parties.

Ingredients
- 20 chicken feet
- 1 tbsp. Chinese cooking wine
- 1/2 tbsp. white rice vinegar
Sauce
- 3 tbsp. light soy sauce
- 1/3 cup rice vinegar , or black vinegar
- 2 lemon , smaller ones (around 200g)
- 1/4 cup chopped coriander
- 1 tbsp. chopped ginger
- 2 garlic cloves ,smashed
- 1 tbsp. sugar
- 3 fresh Thai chili pepper , one red and one green| cut into small circles. This can be adjusted by persoanl perference
- 1 tsp. salt
